Slow Cooker 5-Ingredient Beef Stew with Chuck Roast and Potatoes

Ingredients (5 only)
2 lbs beef chuck roast, cut into 1.5-inch cubes
4 medium potatoes, peeled & chunked
3 carrots, sliced thick
1 onion, chopped
2 cups beef broth
(Salt & black pepper optional but recommended — not counted in the 5)
👨‍🍳 Instructions
Prep the beef
Season with salt & pepper (optional). If you have time, quickly sear in a hot pan 2–3 minutes per side for deeper flavor (optional but worth it).
Layer in slow cooker
Add potatoes, carrots, and onion first.
Place beef on top.
Add broth
Pour beef broth over everything.
Cook
Low: 8 hours (best for tenderness)
High: 4–5 hours
Serve
Stir gently, taste for seasoning, and enjoy warm 🍲
