 Creamy Cheesy Potato Soup

 Ingredients:
4 large potatoes (peeled & diced)
1 small onion (finely chopped)
2 cloves garlic (minced)
2 tbsp butter
2 tbsp all-purpose flour
3 cups chicken broth (or vegetable broth)
1½ cups milk (or half-and-half for extra creaminess)
1½ cups shredded cheddar cheese
½ cup heavy cream (optional, for extra richness)
Salt & black pepper to taste
½ tsp paprika (optional)
2 tbsp chopped parsley (optional)
Optional toppings:
Extra shredded cheese
Crispy bacon bits
Green onions
Sour cream

 Instructions:
Cook the potatoes
Boil diced potatoes in salted water for about 10–12 minutes until fork-tender. Drain and set aside.
Sauté aromatics
In a large pot, melt butter over medium heat. Add onion and cook 3–4 minutes until soft. Add garlic and cook 30 seconds.
Make the base
Stir in flour and cook 1–2 minutes (this thickens the soup).
Add liquids
Slowly whisk in broth, then milk. Stir well to avoid lumps.
Add potatoes
Add cooked potatoes to the pot. Simmer 8–10 minutes.
(For thicker soup, mash some potatoes with a spoon or use a blender for a smoother texture.)
Add cheese & cream
Lower heat and stir in cheddar cheese and heavy cream. Mix until melted and smooth.
Season & serve
Add salt, pepper, and paprika. Garnish with parsley, bacon, or extra cheese.
