🌽🥒 Sweet Corn Zucchini Pie Delight

Ingredients
For the filling
2 medium zucchinis, grated
1½ cups sweet corn (fresh, canned, or frozen)
1 small onion, finely chopped
2 eggs
¾ cup milk or cream
1 cup grated cheese (cheddar, mozzarella, or a mix)
2 tbsp olive oil or butter
Salt & black pepper to taste
½ tsp paprika or chili flakes (optional)
Fresh herbs (parsley or basil), optional
For the crust
1 ready-made pie crust
or
1 cup flour + ½ tsp salt + ¼ cup cold butter + 3–4 tbsp cold water (if homemade)
👩‍🍳 Instructions
Prep the zucchini
Grate the zucchini, sprinkle with a little salt, and squeeze out excess water.
Sauté
In a pan, heat olive oil/butter. Sauté onion until soft, then add zucchini and corn. Cook 3–4 minutes. Let cool slightly.
Mix the filling
In a bowl, whisk eggs and milk. Add cheese, spices, herbs, and the veggie mixture.
Assemble
Preheat oven to 180°C (350°F). Place crust in a pie dish, pour in the filling.
Bake
Bake for 35–45 minutes, until set and golden on top.
Rest & serve
Let it rest 10 minutes before slicing.
