Easy Hamburger Potato Casserole

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (or Italian seasoning)
  • 1 (10.5 oz) can cream of mushroom soup (or cream of celery)
  • ½ cup milk (or beef broth)
  • 4 cups potatoes, thinly sliced (about 3-4 medium potatoes)
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, green onions, crispy bacon bits

Instructions:

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Brown the beef – In a skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain excess fat.
  3. Season – Stir in salt, pepper, and paprika.
  4. Mix soup & milk – In a bowl, combine cream of mushroom soup and milk (or broth).
  5. Layer the casserole –
  • Spread half of the sliced potatoes in the baking dish.
  • Top with half of the beef mixture, then half of the soup mixture.
  • Repeat layers (potatoes, beef, soup).
  1. Cover & bake – Cover with foil and bake for 35 minutes.
  2. Add cheese & finish baking – Uncover, sprinkle cheese on top, and bake for 10 more minutes until bubbly and golden.
  3. Rest & serve – Let sit 5 minutes before serving. Top with sour cream or green onions if desired.
