Strawberry Banana Cheesecake with Graham Cracker Crust

🍌🍓 No-Bake Banana Strawberry Cream Pie Recipe

Ingredients

For the crust

  • 250 g graham crackers / digestive biscuits (crushed)
  • 100 g melted butter
  • 2 tbsp sugar (optional)

For the cream filling

  • 300 g cream cheese (softened)
  • 250 ml heavy whipping cream (cold)
  • 100 g powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • 2 bananas (sliced)
  • 10–12 strawberries (chopped)
  • A handful of blueberries (optional)

For topping

  • Sliced bananas
  • Fresh strawberries
  • Blueberries

Instructions

1️⃣ Prepare the crust

  1. Mix crushed biscuits + melted butter until sandy.
  2. Press firmly into a pie dish (bottom + sides).
  3. Chill in the fridge for 20–30 minutes.

2️⃣ Make the creamy filling

  1. In a bowl, whip the cold heavy cream until soft peaks form.
  2. In another bowl, beat the cream cheese + powdered sugar + vanilla until smooth.
  3. Fold the whipped cream into the cream cheese mixture gently.
  4. Add chopped strawberries and banana slices into the cream mixture and fold gently.

3️⃣ Assemble

  1. Pour the fruit-cream mixture into the chilled crust.
  2. Smooth the top.
  3. Decorate with banana slices, strawberries, and blueberries like in the picture.

4️⃣ Chill

Refrigerate at least 4 hours, preferably overnight, until set.

Tips for Best Results

✔ Add a bit of lemon juice to sliced bananas to prevent browning.

✔ Freeze for 30 minutes before slicing for cleaner cuts.

✔ You can substitute berries with mango, kiwi, or peaches.
