Ingredients
For the crust
- 250 g graham crackers / digestive biscuits (crushed)
- 100 g melted butter
- 2 tbsp sugar (optional)
For the cream filling
- 300 g cream cheese (softened)
- 250 ml heavy whipping cream (cold)
- 100 g powdered sugar
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
- 2 bananas (sliced)
- 10–12 strawberries (chopped)
- A handful of blueberries (optional)
For topping
- Sliced bananas
- Fresh strawberries
- Blueberries
Instructions
1️⃣ Prepare the crust
- Mix crushed biscuits + melted butter until sandy.
- Press firmly into a pie dish (bottom + sides).
- Chill in the fridge for 20–30 minutes.
2️⃣ Make the creamy filling
- In a bowl, whip the cold heavy cream until soft peaks form.
- In another bowl, beat the cream cheese + powdered sugar + vanilla until smooth.
- Fold the whipped cream into the cream cheese mixture gently.
- Add chopped strawberries and banana slices into the cream mixture and fold gently.
3️⃣ Assemble
- Pour the fruit-cream mixture into the chilled crust.
- Smooth the top.
- Decorate with banana slices, strawberries, and blueberries like in the picture.
4️⃣ Chill
Refrigerate at least 4 hours, preferably overnight, until set.
